A playful marriage of Gujarati spirit and modern Indian whimsy – fafda (crispy, savoury snack popular in Gujarat) sprinkled with almonds, bright chutneys, and the unmistakable joy that only a chaat brings to the table.

Method

1. Prepare Fafda

Mix gram flour, water, baking soda, and salt. Heat oil to 120°C. Dip the batter in mould and fry until crisp.

2. Prepare Almonds

Toast almonds in ghee, thinly slice

3. Prepare Mint Chutney Prepare Mint Chutney Prepare Mint Chutney

Blend all ingredients to a smooth paste.

Plating

Spread chutneys, place floral fafda, top with almonds and chaat masala.
Add second crisp layer. Garnish with flowers, almonds, microgreens.
