Method: –
- Combine the flours in a bowl and use enough water to knead into a soft dough. Allow it to rest for the time it takes to make the filling.
- Heat the ghee in a pan and temper the cumin seeds, crushed coriander seed, green chillies and ginger. Cook for a couple of minutes until aromatic, before adding in the green peas.
- Toss to combine before adding all the spice powders, crushing the boiled potatoes and crushed almond to mix into the peas and spices.
- Season with salt and finish off with lemon juice before mashing well and making a homogenous mixture.
- Divide the dough into equal portions, use a rolling pin and gently press each portion into a disc.
- Spoon some of the potato filling into the centre of the disc and fold the corners inwards to make a flat triangular samosa.
- Brush each one with oil and cook in an air fryer at 200 degrees Celsius for 15-17 minutes, until golden-brown and crisp. Serve hot.
