Subz Badam Ka Shorba

A hot bowl of shorba is all that it takes to feel warm and comfortable on a cold winter evening. Comforting to the soul, Subz Badam Ka Shorba is a rich, velvety broth that leaves you asking for more. Serve it as an appetizing starter to kick off a beautiful gastronomical evening.

Method

Peel off the soaked almond and make a fine paste. Heat the ghee in a heavy-bottom pan and add the chopped onion and sauté until translucent. Add ginger-garlic paste and sauté further. Add roughly chopped vegetables and green cardamom, sauté for 2-3 minutes.

Pour in the water and add salt and make a flavourful vegetable stock. Let the mixture cool slightly and then transfer the contents to a blender until completely smooth. Strain the vegetable puree back into the same pot and pass it through a fine-mesh sieve.

Obtain the rich velvety stock and discard the remaining fibrous pulp. Let the shorba gently simmer and add almond paste, white pepper and finish it with fresh cream. Add saffron and your shorba is ready.
