Method:
- In a deep pan, add the ghee and heat it.
- Add all the shredded greens (spinach, mustard, fenugreek and amaranth) and sauté them on a high flame. Cook till all the moisture in the greens evaporates.
- Remove from the flame and set aside to cool.
- Once it reaches room temperature, add them in a deep bowl.
- Add the sautéed greens, sweet potato, chopped green chilli, ginger paste, garlic paste, salt, chopped coriander and mix well.
- Form the mixture into balls of 50gm and coat them on a metal skewer if cooking in a tandoor/spit roast or using a bamboo skewer if cooking on a grill/pan.
- Coat the skewers with the split almonds.
- Cook them on a Tandoor/Spit Fire or add ghee in a pan, and sear them well on both sides.
- Once cooked, place them on a plate of your liking and sprinkle with butter, chaat masala and lemon.
- Serve with a chutney of your choosing.
