Almond and Greens Seekh Kebab

    Almonds (Roasted and Split into 2)
  • 50 gm
    Almond Paste (Peeled and Blanched)
  • 300 gm
    Mustard Leaves (Shredded)
  • 300 gm
    Spinach Leaves (Shredded)
  • 300 gm
    Amaranth Leaves (Shredded)
  • 300 gm
    Fenugreek Leaves (Shredded)
  • 60 gm
    Coriander Leaves (Chopped)
  • 150 gm
    Sweet Potato (Boiled and Grated)
  • 3 No,
    Green Chilli (Chopped)
  • 25 gm
    Ginger Paste
  • 50 gm
    Garlic Paste
  • 75 gm
    Desi Ghee

 

 

 

Method:

  1. In a deep pan, add the ghee and heat it.
  2. Add all the shredded greens (spinach, mustard, fenugreek and amaranth) and sauté them on a high flame. Cook till all the moisture in the greens evaporates.
  3. Remove from the flame and set aside to cool.
  4. Once it reaches room temperature, add them in a deep bowl.
  5. Add the sautéed greens, sweet potato, chopped green chilli, ginger paste, garlic paste, salt, chopped coriander and mix well.
  6. Form the mixture into balls of 50gm and coat them on a metal skewer if cooking in a tandoor/spit roast or using a bamboo skewer if cooking on a grill/pan.
  7. Coat the skewers with the split almonds.
  8. Cook them on a Tandoor/Spit Fire or add ghee in a pan, and sear them well on both sides.
  9. Once cooked, place them on a plate of your liking and sprinkle with butter, chaat masala and lemon.
  10. Serve with a chutney of your choosing.
