Almond Halwa Pie with Cranberries, Vanilla Bean Ice Cream

INGREDIENTS

For Almond Halwa
100 gm Almond Powder
50 gm Ghee
25 gm Sugar
2 gm Cardamom

For Caramel Sauce
100 gm Sugar
20 gm Butter
100 gm Cream

For Base
100 gm Monaco Cookies
60 gm Butter (unsalted)
40 gm Sugar

For Tart
150 gm Almond Flakes
200 gm Caramel Sauce
40 gm Dry Cranberry 150 gm Almond Halwa

Method

1. Make Almond Halwa: Heat the ghee in a pan and add almond powder. Cook it till it turns brown and gives out a nutty fragrance. Then add the sugar and cardamom in the end and mix it well. Take off the flame and let it cool down.

2. Prepare Caramel Sauce: Heat sugar in a non-stick pan till it starts caramelizing. Add butter and mix it well, then take the pan off the flame and add cream.

3. Make the Base: Crush Monaco cookies to coarse consistency. Add rest of the ingredients and mix thoroughly.

4. Assemble the Almond Halwa Pie: Line a pie mould with the Monaco crumble and fill it with badam halwa. In a bowl, add almond flakes and cranberries. Drizzle warm toffee sauce over it. Stir well. Ensure that the almond flakes and cranberries are uniformly coated in caramel sauce. Spread this mix all over the badam halwa pie evenly. Drizzle the leftover caramel sauce over the pie. In a preheated oven, bake the pie at 180 degrees C for 12-13 minutes. Allow it to cool down a little and demould it. Serve warm with a scoop of vanilla bean ice cream.
